My new favorite! Perfect mix of sweet & savory. Red pepper & sun dried tomato soup. Here’s what I did:
2 red peppers, a handful of cashews, 2 garlic cloves, 1/3 can of coconut milk, 3 sundried tomatoes (softened in warm water), 1/4 cup onion, salt & pepper to taste.

I could eat this every day!
