Indian Chicken in Cashew- Cilantro Sauce

Serves 4, Prep: 18 minutes, Cook: 17 min, Total: 35 minutes
 
 

Directions

1. Place the cilantro and cashews in a food processor or blender and process to a paste. With the machine running, add the broth. The mixture will be runny and grainy.
2. Transfer the mixture to a medium nonstick skillet and add the salt. Bring to a simmer over medium heat. Add the chicken and spoon the sauce over it. Simmer, stirring occasionally, for 12 to 15 minutes, or until the chicken is no longer pink. (Cooking time will depend on the thickness of the tenders.)
3. Remove from the heat. Stir in the lime juice. Serve with red-pepper flakes, if desired, at the table.
 
Serving Suggestions

MAKE IT A FLAT BELLY DIET MEAL: Serve with 1/2 cup cooked basmati rice (100) and 1/2 cup cooked green peas (67). Total meal: 397 calories
